Lemon Sorbet

(makes 6)
3 large lemons
200 g icing sugar
500 ml water
50 ml vodka (optional)
1 Remove the zest of one lemon and squeeze the juice of all three lemons.
2 Pour water and juice in a saucepan. Add sugar, lemon zest and bring to a boil, stirring until sugar dissolves.
3 Simmer for 15 minutes, then remove the syrup from heat. Strain it through a sieve to get rid of the lemon zest and let the syrup cool down. Optionally perfume with vodka.
4 Pour into an ice-cream maker and let it work for 20 minutes, or follow the manufacturer's instructions.
My Tips:
Instead of vodka, try using cachaça to give the lemon sorbet a refreshing taste of the Caipirinha cocktail. It will only enhance the citrus taste of the sorbet and its alcohol taste will not be as evident, as when you’d use vodka.
Additionally to 3 lemons you can add the juice and zest of 1 – 2 limes.
You can add more zest in the process of cooking syrup.
Optionally (for decoration purposes) you can add 2 tsp. fresh lemon and lime zest to the syrup when it has cooled down (along with adding alcohol).
