Lemon Sorbet

(makes 6)

  • 3 large lemons

  • 200 g icing sugar

  • 500 ml water

  • 50 ml vodka (optional)

1 Remove the zest of one lemon and squeeze the juice of all three lemons.

2 Pour water and juice in a saucepan. Add sugar, lemon zest and bring to a boil, stirring until sugar dissolves.

3 Simmer for 15 minutes, then remove the syrup from heat. Strain it through a sieve to get rid of the lemon zest and let the syrup cool down. Optionally perfume with vodka.

4 Pour into an ice-cream maker and let it work for 20 minutes, or follow the manufacturer's instructions.

My Tips:

  • Instead of vodka, try using cachaça to give the lemon sorbet a refreshing taste of the Caipirinha cocktail. It will only enhance the citrus taste of the sorbet and its alcohol taste will not be as evident, as when you’d use vodka.

  • Additionally to 3 lemons you can add the juice and zest of 1 – 2 limes.

  • You can add more zest in the process of cooking syrup.

  • Optionally (for decoration purposes) you can add 2 tsp. fresh lemon and lime zest to the syrup when it has cooled down (along with adding alcohol).
