Buckwheat with Mushrooms

(makes 4)

  • 200 g (1 cup) buckwheat

  • 500 ml (2 cups) water

  • 50 g butter, at room temperature

  • 1/2 tsp salt

  • 50 g onions, finely diced

  • 150 g mushrooms, sliced

  • 1 tbsp oil for frying

1 Sort out chaff from buckwheat, then fry in a pan during 2 – 3 minutes.

2 In a thick-walled pot bring to boil salted water. After boiling, add the butter and let it melt.

Add the fried buckwheat to the water. Reduce the heat to medium – low, cover with a lid wrapped in a towel and cook for 15 minutes.

3 Meanwhile in a medium saucepan over medium heat, warm the oil. Add the onion and sauté until softened, 3 – 5 minutes. Add the mushrooms and sauté for another 3 minutes.

4 Add the fried mushrooms and onions to the pot and combine with buckwheat. Cover the pot and wrap it up in an old blanket or a thick towel and leave for 20 - 30 minutes.
