Mango Soup Dessert

(serves 4)
1 big ripe mango
4-5 tbsp coconut milk
1 ripe passion fruit
vegan coconut ice-cream (optional)
1. Peel the mango, and cut it into medium pieces. Then transfer them into a big enough bowl.
2. Using a blender, puree the mango pieces until smooth.
3. Add gradually the coconut milk, adjusting to your taste, and blend again until smooth.
4. If needed, pour the mixture through a single-mesh strainer into a bowl.
5. Cut in half the passion fruit, and stir in its juice and seeds.
6. Ladle soup into bowls and place a scoop of coconut ice-cream on top. Serve immediately.
