Smoked Salmon and Capers Salad

(makes 2)

120 g smoked salmon

1 tbsp fresh lemon or lime juice

2-3 tbsp light olive oil

freshly ground black pepper

a pinch of sugar

1 tsp capers, drained

a handful of fully prepared fresh salad leaves, such as mixed herb salad, young spinach leaves, or wild rocket

1/2 small onion, finely sliced

1. For the dressing whisk together the lemon or lime juice, olive oil, pepper and sugar.

2. On wide plates arrange the salad leaves. On top place the slices of smoked salmon. Scatter the capers and the onion slices over the salmon pieces.

3. Using a teaspoon, drizzle over some of the dressing, and put the rest in a small dish to add at the table. Serve at once.
